Carrot Cup Cakes

I thought I could share some wisdom, this should win him over!!


CARROT CUP CAKES.




125g (4oz) unsalted butter or margarine
125g (4oz) light muscovado sugar (brown sugar)
150g (5oz) self raising flour
1 teaspoon baking powder
1 teaspoon ground mixed spice
75g (3oz) ground almonds
2 eggs
finely grated rind of 1/2 orange
150g (5oz) carrots, grated
50g (2oz) sultanas


1. Butter, sugar, flour, baking powder, mixed spice, ground almonds, eggs and orange rind in a mixing bowl. Mix with hand held electric mixer until light and creamy 1-2 minutes. 


2. Add the grated carrots and sultanas and stir until it's evenly combined, then put in the cupcake cases which should already be lining the tray.


3. Bake in the oven 180*C (350*F) gas mark 4 for 25 minutes until risen and firm to touch. Leave to cool in the bun tray.

p.s For icing, mix Philadelphia cheese and icing sugar (you can add unsalted butter if you like) and mix it to taste!
